Chef Seiya Noborikawa: A Fusion of Cultures in Culinary Art
Raised in a Japanese-Peruvian family, Chef Seiya Noborikawa’s culinary journey began in Peru, influenced by his grandmother’s restaurant. In 2011, he moved to Miami, starting as a Sushi Prep at NOBU and quickly advancing to a Sushi Chef. During his five years at NOBU, Seiya mastered the blend of Japanese and Peruvian flavors.
Seiya’s path led him through Miami’s vibrant culinary scene, including the traditional Japanese sushi bar at BLUE RIBBON and fusion restaurants like MOON THAI, SOKAI, and SUGARCANE. In 2018, he became the Executive Sushi Chef at Mynt in Miami Beach, contributing significantly to its launch.
His tenure as Itamae Chef at OSAKA, a prominent Nikkei Cuisine franchise, further refined his expertise. Now, as the Executive Chef at Bondi, Chef Seiya Noborikawa continues to impress with his innovative, culturally rich dishes, offering a unique dining experience that blends artistic flair with a deep understanding of Japanese and Peruvian culinary traditions.
